It started with a simple idea and a lot of ambition. Siblings Stephanie Kern and Trey Buerger wanted to bring something New Orleans didn't have — healthy, gluten-free, grab-and-go food made with real ingredients and genuine care. Leaning on their creativity, their culinary instincts, and their deep southern roots, they started cooking in a home kitchen and never looked back.
What began as a local passion project grew organically through word of mouth, hard work, and the kind of food that keeps people coming back. Green Fork & Straw had found its place.
Growing the Family Business
Stephanie's son Blair grew up in that original New Orleans kitchen. He learned to cook, learned to serve, and found his passion for taking care of people through food. In 2018 he brought the Green Fork & Straw concept to Houston — and the whole family showed up to help open the doors.
Today Blair and Rachel own and operate three Houston locations, carrying forward the same mission that started in New Orleans: make it simple for families to eat well, every single day.

We believe where food comes from is just as important as how it's prepared.
Every ingredient we use is chosen with intention. Our produce is organic, sustainably farmed, and locally sourced whenever possible. Our kitchen is 100% gluten-free — not because it's trendy, but because it's the right way to take care of the people we serve. From the first ingredient to the last bite, thoughtfulness is built into everything we make.

Why is everything you make organic and gluten-free?

It started with a genuine commitment to making food that works for more people – and it's stayed that way because it's who we are. Going organic and gluten-free pushed us to be more intentional about every ingredient we use, which ultimately makes everything taste better too. It's not a trend for us, it's the foundation everything we do is built on.

Sustainability is built into how we operate every day – from small-batch daily preparation that minimizes waste to our local sourcing relationships and packaging choices. We're always looking for ways to reduce our environmental footprint and take our responsibility to the communities we serve seriously.
